It is made with grapes selected from our vineyard “La Mata de Francia” where the soil is degraded granite located in Villanueva del Conde at 700 m altitude. A small part of the grapes come from three other small vineyards of centenary vineyards, also granitic.

"Made with organic grapes grown on granite soils in the little-known Sierra de Salamanca at 700 metres, this is a very rare Spanish white with incredible texture, focus and minerality, especially at only 12.5% alcohol. Salty, yeasty and beeswaxy, with a bracing, mouthwatering finish. No oak, just fruit intensity and texture."

2019 was extremely dry and quite warm

Two timely storms at the end of July and in mid-August unloaded 40 litres which brought the vines to life. All this contributed to a very good plant and grape health without the need for any treatment.

The harvest began on 29 August.

The granite white Rufete is slightly less concentrated and unctuous than the slate, and slightly less sweet.

  • Partially matured in French oak barrels.

  • Unfiltered, unclarified, stabilised only with the natural cold of the cellar.

  • Harvest in 15 kg crates with selection of clusters in the vineyard.
  • Selection of grapes on the table.
  • Fermentation in steel tanks with indigenous yeasts.
  • Must and wine are always moved by gravity.
  • Ageing on lees.
